Skirret was very popular in the UK before the discovery of potatoes!

It prefers moist fertile soil in a sunny location but is happy anywhere as long as it doesn’t dry out too much.

Roots taste like a cross between carrot and liquorice.

The roots can be woody in the first year but tender after that.

Harvest in autumn and winter but leave some roots in the ground to grow on for the following year.

Season

Low and bushy in early spring with flowering stems in late spring. All greenery dies back in the winter.

Position

Plant in a sunny location.

Soil

Planting

Skirret grows to around 1m in height and the roots can be 15cm to 20cm long. Plant seedlings 30cms apart.

Roots should be cooked – delicious boiled or roasted.
